Résumé : We examine the determinants of dietary choices and responsiveness to the Nutri-Score nutrition label using an incentivized laboratory experiment with 809 French consumers. Participants selected a lunch menu before and after Nutri-Score introduction and completed measures of psychological, behavioral, and socioeconomic characteristics. Individual psycho-behavioral indicators neither predicted baseline nutritional quality nor moderated responses to the label after accounting for multiple testing and sociodemographics. Nevertheless, Nutri-Score improved average nutritional quality by approximately one FSA-score point. A person-centered analysis identified three distinct profiles, including one with substantially poorer dietary choices. These findings reveal meaningful heterogeneity in dietary quality but remarkably homogeneous responses to Nutri-Score.
