First Winter Workshop : Experimental and Behavioral Economics of Food Consumption

The aim of the workshop is to unite researchers using different methodological tools and speculate together on how to integrate new insights from behavioral economics into the toolkit used to address food consumption issues.

The field of experimental economics applied to food consumption is now mature. The core methods of value elicitation have been fruitfully used for years, to the point that WTP-experiments are now routinely run across the globe. It is time we challenge the existing set of methods. Can we still assume fixed preferences, or are we to allow them to have a more flexible, evolutionary nature? What is the impact on food choice of beliefs and misperceptions on the one hand, and of the decision environment and social norms on the other?

The intensive two-and-a-half day workshop will be organized with no parallel sessions, with plenty of time to present and discuss, and hosted in Autrans, a cozy little village off the crowded beaten path in the Vercors, an Alpine range near Grenoble, France. We believe that scientific leaps need the work of several minds together, in a relaxed and focused atmosphere.
